IYO Aalto is the second restaurant opened by Claudio Liu, former patron of IYO Taste Experience, one Michelin star. The fulfilment of a deep-routed wish representing a significant step towards the most authentic Japanese cuisine through two distinct but consistent experiences: the sushi counter and the gourmet restaurant.

Sushi master Masashi Suzuki faithfully reproduce, for a select few, the wonder and the rigor of the Edomae zushi tradition. An ancient and fascinating ritual only to be found in Tokyo and Japan.
